Healthy Shrimp Stir-fry (in under 20 minutes!)

WHY I LOVE THIS: This super easy stir-fry combines lean protein, complex carbs and micronutrient rich veggies without the excessive oil.

WHAT YOU'LL NEED:

1- tsp coconut oil

1- shrimp ring with cocktail sauce, thawed

1- bag brown rice (look for the quick cooking kind!)

1- 500g bag frozen mixed oriental veggies

1- small onion (optional)

1- clove garlic (optional)

1- small bottle reduced sodium soya sauce

SERVES: 4

HOW TO MAKE:

In a pot, cook 1 cup of rice as per the package directions.

Meanwhile, in a wok or frying pan, add coconut oil to the pan and sautee onion and garlic over medium heat.

Add in shrimp and frozen veggies and place lid on top of pan. Steam for 5 minutes or until veggies have turned a more vibrant color. Don't over-steam!

Once rice is cooked, mix with veggies and shrimp and add in cocktail sauce and soya sauce.

Dish 1/4 of the recipe onto a plate and divide the remaining into 3 portions. Freeze or save for lunch the next day!
