Sweet Potato Protein Pancakes

WHY I LOVE THIS:
These are a healthy, high protein alternative to regular pancakes and the combination of protein, low fat and moderate carbs make them the perfect Saturday morning pre-workout meal.
WHAT YOU'LL NEED:
1 1/2 scoops of vanilla or chocolate protein (I use an un-denatured protein from New Zealand)
100g of cooked, mashed sweet potato
1/4 cup dry oatmeal
1 tsp baking powder
50g egg whites
1 tsp chia or flax seeds (optional)
sugar-free pancake syrup or pure maple syrup
50g raspberries for garnish
HOW TO MAKE:
1. Cook and mash sweet potatoes ahead of time.
2. Throw all ingredients (except syrup and berries) in a bowl and mix until smooth. The batter should be THICK. Feel free to experiment with different quantities of oats, sweet potato and egg whites!
3. In a frying pan, add 1/2 tsp of coconut oil and pour batter in. Cover with lid and let bake on medium heat for several minutes, then flip and cook for an additional minute.
4. Pour syrup on top, garnish with berries and you've got yourself a complete, nutritious and delicious meal to help fuel your workout!
